Tater tot taco casserole

Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 packet taco seasoning
- 1 cup salsa
- 1/2 cup nonfat Greek yogurt
- 1 (15.25 oz ) can pinto beans, drained and rinsed
- 1 (15.25 oz) can black beans, drained and rinsed
- 1 (14.5 oz ) can whole kernel corn, drained
- 1 cup shredded cheddar cheese, divided
- 2 lb. bag seasoned tater tots
Instructions
- Coat a large baking dish (9" x 13") with cooking spray; set aside. Preheat oven to 400°F.
- Meanwhile, heat large nonstick skillet over medium heat until hot. Add ground beef, onion and bell pepper; cook 3 to 4 minutes, breaking into 1/2 inch crumbles and stirring occasionally. Stir in taco seasoning, salsa, yogurt, beans, corn and 1/2 cup cheese; cook 3 to 4 minutes until heated through, stirring occasionally.
- Add mixture to coated baking dish. Layer the top with tater tots. Cover with aluminum foil and bake in 400°F oven for 45 minutes. Uncover and sprinkle top with remaining cheese. Bake uncovered for an additional 14 minutes until instant-read thermometer inserted into center of beef mixture registers 160°F.
Cook's Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of doneness.
