slow cooker bacon cheeseburger soup

This recipe comes together with just a few ingredients and some spices you probably already have in the cabinet. It's pure, slow-cooked comfort food.

  •    Serves 6

Ingredients

  • 1 lb lean ground beef (93% lean or leaner)
  • 2-3 large russet potatoes, peeled and cut into 1" pieces. 
  • 1 yellow onion, diced
  • 2 celery stalks, chopped
  • 1 cup shredded carrots
  • 2-3 cloves garlic, minced
  • 3 cups chicken stock
  • 1 tsp basil
  • 1 tsp parsley
  • Salt and pepper to taste
  • 3 tbs butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups cheddar cheese

Optional Toppings: Chives, Cheese, Bacon

Instructions

  1. Brown ground beef, seasoning with salt and pepper. 
  2. Add ground beef, potatoes, onion, carrots, celery, basil, parsley, garlic, salt, pepper and chicken stock to slow cooker. Cover and cook on high for 4 hours. 
  3. After 4 hours, combine butter and flour together in medium saucepan. Do not brown. Once thoroughly mixed, add milk. Pour into slow cooker. Add cheese, cover and cook on low an additional 30-60 minutes. 
  4. Garnish with bacon, chives and cheese
